To cook with Shemin’s Goan Indian Curry Paste, gently fry an onion (optional) until soft. Add one pot of paste and cook briefly to release the aromas. Stir in a tin of chopped tomatoes or coconut milk, then add up to 1kg of ingredients such as fish, chicken, vegetables or lentils. Simmer gently until tender and fragrant.

Top Tip: Add a splash of water or dollop of coconut cream to help the paste cook evenly and bring out the full aroma of the spices.
I love you products and that you send items by Royal Mail. I’m returning to cooking with Indian spices, my ex husband was sadly not a fan, and remember using several spices not on your list including green and brown cardamoms. I used to buy these loose from Romford market. If I could get them from you I’d be delighted, but perhaps there’s a reason that you don’t offer them other than in mixes. Hazel.
