    Delicious!!! This paste is as authentic as you can get and I speak from experience. Makes superb Thai red curry or leave out the coconut milk for a superb jungle curry, either way it makes a truly wonderful Thai curry.

    Made the Thai Twist Risotto from your newsletter – what a triumph. I used lightly coconut battered prawns from Marks and Spencer and the combination was perfect.
